Erin: New year, new diet. Laura and I are trying to make vegan choices, which is a whole new challenge. Of course, it's for humanitarian reasons, but I thought it would be nice to cut the dairy since it doesn't agree with me. Milk and cheese make my throat and ears itch, which is why I've used only almond milk these past few years. Dairy is also apparently not good for respiratory health, so I guess we'll see if my asthma improves. As for eggs, we'll see. We do plan on getting chickens at some point, so I see eggs in our future. While we might not be the strictest of vegans, we do plan to make the vegan choice as much as possible, and I thought it would be fun to blog our favorite recipes. You won't see daily entries, leftovers, or PB&J sandwiches, but whenever we make a new meal, I'm happy to share it with my readers, along with my thoughts about it. You can be sure I will post my honest opinions about the meals and recipes we try, and especially the substitutes. Enjoy!
